1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
2. Stuff each roasted poblano chile with Monterey Jack and a little cheddar. Arrange chiles seam-side down in the dish.
3. In a bowl, whisk eggs, milk, flour, baking powder, salt, pepper, and garlic powder until smooth.
4. Pour egg mixture evenly over the stuffed chiles.
5. Sprinkle remaining cheddar cheese on top.
6. Bake uncovered for 30–35 minutes until puffed, golden, and set in the center.
7. Let rest 5 minutes before serving. Spoon warm chile sauce over the top if desired.
